The Secret’s in the Sauce

Cookbook author and lifestyle expert Victoria Amory specializes in the type of entertaining we’d all like to master: elegant and effortless. Her line of sauces makes cooking simple enough that you can get out of the kitchen and have fun at your own parties. Her all-natural gourmet condiments are great additions to weeknight meals too—brown some chicken or saute some shrimp, add one of her sauces and dinner is served. “People really want clean food that’s also delicious,” says Victoria. “Life is all about the sauce.”

Raised in Spain, Victoria learned the art of gracious entertaining while watching her parents, who were always welcoming friends into their home. She lived in Palm Beach for a time before moving to Greenwich five years ago. The mom of three launched her namesake line in 2014, but she first whipped up jars of assorted sauces a few years earlier for a fundraiser at The King School. When all 200 bottles sold out, she knew she was on to something. Victoria now sells her artisanal food line in more than 1,000 stores nationally. In 2015, she introduced a line of crisps made from simple flatbread with a little puff. On her site, she also carries a collection of serving pieces inspired by Spanish tiles.

Presentation is key to entertaining, she says. “It’s silly to be a hostess and stress over the food,” says Victoria, who has been known to throw a dinner party around a mac ‘n’ cheese main course. “You can order out, put it on pretty plates and light some candles. Put on a nice dress and lipstick, serve wine and there you go.” She suggests mixing a house drink, something that’s in pitchers and ready to pour. Easy dishes based on her sauces? Top grilled salmon with a dollop of one of her mayonnaises; slice up a roasted chicken and avocado and add roasted garlic mayo for a luscious chicken salad; mix sautéed shrimp with the red chili piri piri sauce for a spicy, garlicky main; blend green chili piri piri with crushed feta cheese to make a zesty dip.
